Beef/Turkey Chili

Ingredients

Ingredients for 4 servings:

1 tablespoon olive oil

4 tablespoon minced garlic

1 onion, diced

2 green bell pepper, diced

2.6 lbs 95% lean ground meat (may combine beef and/or turkey effectively)

2 can red kidney beans

2 cups beef broth


Seasonings

3 tablespoon chili powder

2 tablespoon smoked paprika

2 teaspoons dried thyme

1 teaspoon cinnamon

1/2 teaspoon cayenne powder (optional)

pinch of sea salt & pepper

1 cup tomato sauce or 1 tbs tomato paste

sea salt & pepper to taste

garnish

3 minced jalapeno peppers

cilantro

1 1/4 tbs sherry vinegar (1/2 tsp:1 cup chile ratio)

Description

Hearty, protein-packed chile with moderate spice and a bit of tang. Super easy to make.

Directions

In a dutch oven/pot, sautee in oil: garlic, onion, bell pepper, jalapenos. (~5 mins)

Add ground meat to pot and chop it up as it cooks. As the meat continues to cook, add the seasonings. Cook until meat is almost cooked through.

Pour in beef stock, tomato sauce, beans; and fold everything together. Reduce the heat to a light simmer, then cover and cook for 25 -60 minutes, then allow it to slightly cool off the heat to thicken.

Add sherry vinegar.

Garnish and enjoy with your choice of bread, rice, sweet potato, cauliflower mash or plantain!

To make from dried beans, add 1:4:0.5 dry kidney beans:water:tsp salt and pressure cook at max for 23 minutes.
